So! Here is a recipe straight from one of our demonstration css - our first possible exam dish - the lemon tart. It is actually a combination of what we learned in class and what Zeina, Sheenece and I made up for our tea party. We craved the nuttiness from the almond cream we made for our Jalousie aux Mirabelle and decided to go for the blueberries. So here is the final result - an almond cream filled tart topped with fresh blueberries.


Tart base recipe (pate sucree):
125 gram room temperature butter
50 gram caster sugar
1 egg
200 gram soft flour
2 gram salt
5 gram vanilla bean paste
How to make it:
1. Cream butter in baking machine till it goes soft
2. Ad sugar and combine the two ingredients
3. Ad 1/2 the egg and vanilla paste and combine all the ingredients
4. Sieve flour and salt into mixture, combine using a scraper
5. Put the dough on the table and knead the dough
6. Cover with cling film and put the dough in the fridge for 30 minutes
7. Once the dough is out of the fridge, bring it back together
8. Roll dough on baking paper till 3 mm thick
9. Dock the dough and place it over the mould, tuck it in and place it in the fridge for 4 minutes
10. Trim the edges and blind bake* it for 15 minutes 175° C.
*Line the tart with an oven safe cling film or baking paper and add beans to prevent the dough from rising.

Almond cream recipe:
60 gram unsalted, room temperature butter
60 gram caster sugar
15 gram soft flour
60 gram ground almonds
10 vanilla paste
1 egg
How to make it:
1. Combine butter and sugar in a bowl
2. Ad 1/2 the egg and combine the mixture, then ad the rest off the egg
3. Sieve the flour and ground almonds and combine with the mixure
4. Ad the vanilla past and combine
5. Pipe the almond cream onto the tart
Topping:
150 gram fresh blueberries
Dried raspberry powder (optional)
Icing sugar (optional)
Time for decorations!
Add the blueberries onto the almond cream and for an extra finish mix the dried raspberry powder with the icing sugar for a cute pastel colour and sprinkle it over the tart. And you are done! A perfect cake for any occasion with endless ways to customize it. Change the blueberries to apples for a more fall inspired dessert or ad cinnamon for the perfect Christmas cake.
